Ingredients
  

For the Salad

  • 3 cups carrots, julienned or grated
  • 2 tablespoons green onions, finely chopped
  • 1 tablespoon sesame seeds (white or black)
  • 1 tablespoon fresh cilantro, chopped (optional)

For the Dressing

  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon garlic, minced
  • ½ teaspoon chili flakes (optional)

Instructions
 

  • In a large bowl, add the shredded carrots, green onions, and cilantro.
  • In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, and chili flakes.
  • Pour the dressing over the carrots and toss well until evenly coated.
  • Sprinkle sesame seeds on top.
  • Let the salad rest for 5 minutes to absorb flavors.
  • Serve fresh and enjoy.

Notes

  • You can add shredded cabbage or cucumber for extra crunch.
  • Adjust sweetness and spice according to taste.
  • Best served fresh but can be stored in the refrigerator for up to 24 hours.
  • For extra protein, add tofu, edamame, or grilled chicken.
