For the Pie Crust
- 1 unbaked 9-inch pie crust (homemade or store-bought)
For the Cherry Filling
- 4 cups fresh or frozen cherries (pitted)
- ¾ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- ¼ teaspoon almond extract (optional)
For the Crumb Topping
- ¾ cup all-purpose flour
- ½ cup brown sugar
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup unsalted butter (cold, cubed)
Preheat the oven to 375°F (190°C).
Place the unbaked pie crust into a 9-inch pie dish and set aside.
In a bowl, mix cherries, sugar, cornstarch, lemon juice, vanilla extract, and almond extract.
Pour the cherry filling evenly into the prepared crust.
In another bowl, combine flour, brown sugar, cinnamon, and salt.
Cut in cold butter using a fork or fingers until crumbly.
Sprinkle the crumb topping generously over the cherry filling.
Bake for 40–45 minutes, or until the topping is golden brown and filling is bubbly.
Remove from oven and allow the pie to rest for at least 2 hours before slicing.
