- 2 cups cooked chickpeas (or 1 can, drained & rinsed)
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 medium carrot, diced
- 1 celery stalk, chopped
- 1 teaspoon ground cumin
- ½ teaspoon paprika
- ½ teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- 4 cups vegetable broth
- 1 cup water
- 2 tablespoons lemon juice
- Fresh parsley for garnish
Heat olive oil in a large pot over medium heat.
Add chopped onion and sauté for 3–4 minutes until soft.
Stir in garlic, carrot, and celery. Cook for another 3 minutes.
Add cumin, paprika, black pepper, and salt. Mix
Add chickpeas, vegetable broth, and water. Bring to a boil.
Reduce heat and let simmer for 25 minutes.
Use an immersion blender to partially blend for a creamy texture (optional).
Stir in lemon juice and simmer for 2 more minutes.
Rest for 5 minutes, garnish with parsley, and serve warm.
