Ingredients
  

  • 2 cups cooked chickpeas (or 1 can, drained & rinsed)
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 celery stalk, chopped
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • 4 cups vegetable broth
  • 1 cup water
  • 2 tablespoons lemon juice
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté for 3–4 minutes until soft.
  • Stir in garlic, carrot, and celery. Cook for another 3 minutes.
  • Add cumin, paprika, black pepper, and salt. Mix
  • Add chickpeas, vegetable broth, and water. Bring to a boil.
  • Reduce heat and let simmer for 25 minutes.
  • Use an immersion blender to partially blend for a creamy texture (optional).
  • Stir in lemon juice and simmer for 2 more minutes.
  • Rest for 5 minutes, garnish with parsley, and serve warm.

Notes

  • You can add spinach or kale for extra nutrients.
  • For a spicy version, add chili flakes or cayenne pepper.
  • Store leftovers in an airtight container for up to 3 days in the refrigerator.
  • This soup freezes well for up to 1 month.
