Ingredients

For the Salad

  • 2 large cucumbers, sliced or chopped
  • 1 cup romaine lettuce (optional, chopped)
  • ¼ cup grated Parmesan cheese
  • ½ cup croutons
  • 1 tablespoon lemon juice

For the Caesar Dressing

  • ¼ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons grated Parmesan cheese
  • Salt and black pepper, to taste

Instructions

  • Wash the cucumbers thoroughly and slice them into thin rounds or half-moons.
  • In a small bowl, whisk together mayonnaise, Dijon mustard, garlic, olive oil, Worcestershire sauce, lemon juice, Parmesan cheese, salt, and black pepper until smooth.
  • In a large mixing bowl, add cucumbers and romaine lettuce (if using).
  • Pour the Caesar dressing over the salad and toss gently until well coated.
  • Top with croutons and extra Parmesan cheese.
  • Let the salad rest for 5 minutes before serving to allow flavors to blend.

Notes

  • For a healthier version, use Greek yogurt instead of mayonnaise.
  • Add grilled chicken or shrimp to make it a complete meal.
  • Best served fresh; avoid storing for long as cucumbers release water.
  • Adjust garlic and lemon according to taste preference.
