Ingredients
  

  • 1 cup sourdough discard (unfed)
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons melted butter or olive oil
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika (optional)
  • ½ teaspoon dried rosemary or thyme (optional)

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, mix sourdough discard, shredded cheese, melted butter, salt, and spices until smooth.
  • Spread the mixture very thinly on the parchment paper using a spatula.
  • Sprinkle extra herbs or cheese on top if desired.
  • Bake for 20–25 minutes, until golden and crisp.
  • Remove from oven and let cool completely.
  • Break into cracker-sized pieces and serve.

Notes

  • Spread the dough as thin as possible for extra crispy crackers.
  • Use parchment paper to prevent sticking.
  • You can substitute cheddar with parmesan, gouda, or mozzarella.
  • Store crackers in an airtight container for up to 5 days.
